  2. 2) les morilles : Réhydratez les champignons dans de l'eau tiède pendant une demi journée. Puis filtrez bien l'eau, gardez la. Rincez bien les morilles. Il ne doit plus y avoir de sable dans les champignons ni dans l'eau de trempage. Sinon prenez une gaze pour filtrer.
  3. 3) la poularde : Faites dorer la viande dans une cocotte et du beurre + un peu d'huile. Puis réservez. Ensuite faites dorer 3 échalotes ciselées. Remettez la poularde avec. Ajoutez la moitié de la bouteille de vin jaune. Ajoutez 30cl de fond de volaille et 20 cl de jus de trempage des morilles. Faire mijoter une bonne heure. Puis sortez la viande et faites réduire la sauce à feu vif pendant 20mn.
  4. 4) la sauce : Dans un peu de beurre faites revenir 3 échalotes ciselées. Ajoutez 2 verres de vin jaune. Laissez évaporer presque entièrement; Ajoutez la crème et laissez mijoter 5mn.
